It’s easy to enjoy this delicious mixture of shrimp and rice sautéed with egg, onion, garlic and carrots. Great to eat alone or pair with an entrée.

Ingredients

  • 2 cans (4 oz) Tiny Shrimp
  • 1/2 cup chopped green onion
  • 2 cloves garlic minced
  • 1/4 cup diced carrots
  • 2 tablespoons vegetable oil
  • 2 large eggs, lightly beaten
  • 3 cups cooked rice, cold
  • 2 tablespoons soy sauce
  • 1 teaspoon chicken bouillon granules

Directions

In skillet, saute green onion, garlic and carrots in hot oil for 2 minutes stirring. Stir in beaten eggs, scramble. Add cooked rice, soy sauce and chicken boullion.

Stir and cook over low heat for 2 minutes. Add shrimp and stir gently, heat until mixture is steaming hot.

Makes about 4 cups.
