Mediterranean Tuna & Hummus

Throw all salad stereotypes out the window, this Mediterranean-Meets-Albacore Salad sets a new, mouth-watering standard. It combines delicious, premium tuna with hummus and fresh-from-the-garden-vegetables for a lunch recipe unlike anything your taste buds have ever, well… tasted.
- 1 ( 5oz) can Bumble Bee® Chunk White Albacore in Water, drained
- 1/2 cup sliced cucumber
- 1/4 cup diced red pepper
- 1/4 cup thinly sliced red onion
- 2 tbsp sliced cured black olives (such as Kalamata)
- 1 tbsp lemon juice
- 2 tbsp extra virgin olive oil
- 1 large spoonful hummus (about 1/4 cup)
- 1 sprig fresh parsley, leaves torn
- 1 tbsp sliced almonds
Combine Chunk White Albacore with cucumber, red pepper, red onion, olives, lemon juice, and olive oil.
Toss to combine and season with salt.
Place hummus on plate and spread into a swoosh using the back of a spoon.
Arrange the tuna mixture over the hummus.
Garnish with parsley and almonds.
