Whole Grain Tuna Quesadilla



This easy-to-make quesadilla a standout for a weeknight meal or appetizer perfect for entertaining. Using whole grain tortillas, reduced fat cheese, and Greek yogurt in place of sour cream makes for a lighter and leaner dish. But you wouldn’t know it from the taste!

Ingredients

1 can (5 oz) Prime Fillet® Solid White Albacore Tuna, drained and flaked

4 tablespoons low-fat plain Greek yogurt, divided

2 teaspoons lime juice

1/4 teaspoon chili powder

1/4 teaspoon garlic powder

1/8 teaspoon black pepper

2 tablespoons sliced green onion

1 tablespoon salsa

2 8-inch whole grain tortillas

1/4 cup shredded reduced fat Mexican blend cheese

1/4 avocado, cut into chunks


Directions

In a medium bowl, combine 2 tablespoons yogurt, lime juice, chili powder, garlic powder, and black pepper. Gently stir in green onions, salsa, and tuna until combined. Spray a medium skillet with cooking spray and put 1 tortilla in pan, heating on medium high heat. Spread tuna mixture evenly over one tortilla and sprinkle cheese over the top. Top with the second tortilla and spray the top with cooking spray. Cook quesadilla for 3 minutes per side, or until the tortillas are crispy and browned on each side. Remove quesadilla from heat and slice into triangles. Serve topped with remaining 2 tablespoons Greek yogurt and avocado chunks.
