Shrimp Casserole

Servings: Serves 4-6


2 cans (4 oz) Medium Shrimp, drained
6 slices of bread, broken into pieces
8 ounces sharp Cheddar cheese, broken into pieces
1/4 cup margarine, melted
4 eggs, beaten
1/2 teaspoon dry mustard
1/4 teaspoon salt
2 cups low fat milk


Preheat oven to 350 degrees F. Lightly grease or use nonstick spray to prepare a 2 1/2 quart casserole dish. Divide and layer bread, shrimp and cheese pieces, repeat layer. Pour melted margarine over top of ingredients in casserole. Set aside. In small bowl, beat eggs; add mustard, salt and milk. Mix well and pour over layered casserole. (Note: May be assembled and held over night in refrigerator.) Cook covered for 1 hour or until firm.
