Oyster, Herb & Cheese Mushroom Cups

Servings: Makes 25 Appetizers. Serves 8


1 can (3.75 oz) Fancy Whole Smoked Oysters, drained and chopped

25 large fresh Mushrooms (about 1 3/4 pounds)

1 tablespoon margarine

3 tablespoons cream cheese with garlic and herbs

1 chopped almonds

1/4 cup olive oil

1 tablespoon chopped fresh parsley


Remove stems from mushrooms and finely chop stems for filling. In medium skillet, melt 1 tablespoon margarine and saute chopped mushrooms over medium high heat. Remove from heat and add oysters, cheese and almonds, mixing well to make filling. In a large skillet, heat oil and saute mushroom caps until well coated. Place on foil line baking sheet. Divide filling among mushroom caps. Broil 3 to 5 minutes. Garnish with parsley and serve hot.
