Ingredients

1 5-oz. can of Solid White Albacore Tuna, drained
1 red bell pepper, chopped
1 cucumber, sliced lengthwise
½ of a red onion, chopped
2 cloves of garlic, minced
½ cup of chickpeas or garbanzo beans
½ cup of olives, halved
½ cup of chopped fresh parsley, optional for garnish
1 teaspoon of salt and pepper to taste
3 tablespoons of olive oil
1 lemon, juiced and zested


Directions

Combine red bell pepper, cucumber, red onion, Solid White Albacore Tuna, garlic, olives, chickpeas and lemon juice in large bowl. Mix well before adding olive oil and lemon juice. Season to taste with salt and pepper. Garnish with parsley and cool in the refrigerator. Serve cold and enjoy!
