Greek Tuna Salad Over Quinoa

1 5 oz cans of Solid White Albacore Tuna In Water, drained
1 cup cucumber, diced
1 cup baby asparagus, substitute with green beans if desired
1 cup cherry tomatoes, cut in half
6 Greek Pepperoncini peppers
1 shallot, minced
2 cups quinoa, cooked
¼ cup kalamata olives
¼ cup feta cheese
¼ cup fresh dill, chopped finely
¼ cup fresh mint, chopped finely
¼ cup lemon juice, fresh squeezed
3 tablespoons of olive oil
1 teaspoon of salt & pepper to taste


Cook the quinoa according to instructions on package. Drizzle olive oil, dill, mint, shallots, and lemon juice. Fluff with fork while tasting and set aside. Portion out quinoa into servings. Top with asparagus, tuna, cucumbers, feta cheese, olives, tomatoes, and Pepperoncini peppers. Drizzle more olive oil and squeeze lemon juice over the salad. Season and adjust ingredients to taste. Serve immediately.
