Irresistible Open-Faced Tuna Melt

When you’ve got it, flaunt it. And our irresistible open-faced tuna melt GOT IT. Chunk Light tuna. Grainy mustard. Fresh herbs. Heirloom tomatoes. Sharp cheddar. All the most delicious ingredients, all on full display atop perfectly crusty bread. Nom.
- 1 (5oz) Can Bumble Bee® Chunk Light Tuna in water or Wild Caught Light Tuna Pouch
- 2 tbsp Plain Greek Yogurt
- 1 tbsp Grainy Mustard
- ½ Lemon
- Mixed Herbs
- Sliced bread of choice
- Heirloom Tomato
- Shredded White Cheddar Cheese
- Salt & Pepper to taste
In a bowl, combine 1 (5oz) drained can chunk light tuna with 1 chopped scallion, 2 Tbs plain Greek yogurt, 1 Tbs grainy mustard, juice of ½ lemon and a handful of chopped mixed herbs like dill, chives, tarragon and parsley or whatever you have on hand.
Season to taste with kosher salt and fresh ground pepper.
Toast 2 thick slices of good crusty bread, layer on slices of heirloom tomato and spread with tuna salad. Top with a few tbsp of shredded white cheddar cheese and broil until cheese is bubbly and melted. Sprinkle with extra chopped herbs, flakey Maldon salt and more pepper.
