Recipe for CHIPOTLE TUNA QUESADILLA

Ingredients

  • 1 pouch (2.5 oz.) Bumble Bee Chipotle Seasoned Tuna
  • 1/3 cup fresh corn kernels
  • 1/3 cup thinly strips red pepper
  • 1 teaspoon butter
  • 1 teaspoon oil
  • 2 8-inch flour tortillas
  • ¼ cup guacamole
  • ½ cup shredded Chihuahua or pepper jack cheese, divided
  • 1/3 cup black beans

Directions

Roast corn and red pepper in a large cast iron skillet over medium-high heat until lightly charred.

Remove corn and red pepper and reduce heat under pan to medium-low; add butter and oil.

Lay 1 tortilla flat in pan. Layer guacamole, ¼ cup cheese, tuna, corn, red pepper, beans and remaining cheese over the tortilla; top with the second tortilla.

Cook over medium-low heat 3 minutes.

Turn and continue cooking 3 to 4 minutes or until browned and heated through.

Cut quesadilla into quarters.
