Ingredients
- 6 wonton wrappers cut into 3” rounds
- Canola oil, for frying
- 1 large avocado
- 2 tablespoons sour cream
- 3 tablespoons fresh lemon juice (1 lemon)
- 1 teaspoon sea salt
- 2 cans Bumble Bee Snackers™ Lemon Pepper Tuna
- 2 red radishes and/or 1 carrot, sliced into matchsticks
- Fresh mint and/or sesame seeds, for serving
Directions
- In a small, heavy-bottomed pot over medium-high heat, add 3-4” oil and heat to 360˚F, using a candy or deep fry thermometer to get an accurate temperature reading. Make wonton shells one at a time: Using tongs, submerge half of a wonton into oil and fry until golden and crisp, about 30 seconds; immediately repeat with the other side, making a taco shape. Transfer to a paper towel lined plate to dry and firm up. Repeat with remaining taco shells.
- For the avocado cream, in a blender or food processor, mix avocado, sour cream, lemon, and salt until smooth.
- In each taco shell, spread an even layer of tuna across the bottom. Top with radish/carrot and a drizzle of avocado crema, to taste. If desired, garnish with a pinch of fresh mint and/or sesame seeds; serve immediately.
