Tuna Cannellini Bruschetta with Jalapenos

A light bite that’s not light on flavor. Spicy and zesty flavors add pizzazz to tender beans and tuna atop a crunchy slice of toasted baguette.

1 can (5 oz) Prime Fillet® Albacore Tuna with Jalapenos & Olive Oil, oil reserved

10 1/2 inch slices whole grain baguette

1/2 cup rinsed and drained reduced sodium canned cannellini (white) beans

2 teaspoons fresh lemon juice

1 stalk celery, finely chopped

1/4 teaspoon freshly ground black pepper

2 tablespoons finely chopped red onion

1 teaspoon lemon zest


Preheat oven to 425 degrees F. Lightly brush one side of bread slices with 1 tablespoon of reserved oil and bake for 5-7 minutes, until golden brown. Mix tuna, the remaining oil, beans, lemon juice, celery, black pepper, and onion together gently until all ingredients are combined. Spoon tuna mixture onto toast slices and sprinkle with lemon zest.
