Shrimp and Mushroom Pasta

Servings: Serves 4


2 cans (4 oz) Medium Shrimp, drained

8 ounces dry capellini or angel hair pasta

2 cloves garlic, minced

2 cups sliced fresh mushrooms

1/2 cup diced onion

1/4 cup butter

2 cups heavy cream

1/2 cup grated Parmesan cheese

2 egg yolks, slightly beaten

1/4 teaspoon thyme, crumbled

1/4 teaspoon black pepper

1/2 cup frozen peas, thawed


Cook pasta according to package directions, set aside. In a skillet, saute garlic, mushrooms, and onion in butter until onion is soft. Stir in cream, cheese, egg yolks, thyme and pepper. Simmer 8-10 minutes, stirring constantly, until sauce begins to thicken. Gently stir in shrimp and peas, cook 5 minutes or until heated through. Pour over hot pasta. Toss gently. Garnish with additional Parmesan cheese as desired.
