Tuna Stuffed Peppers With A Chipotle Kick



You can spice up a normal dish with the addition of your favorite flavors. This recipe uses Bumble Bee® Prime Fillet® Albacore Tuna With Chipotle and Olive Oil and spicy seasoning to bring a whole other level of flavor to your diet. Prepare this Tuna Stuffed Peppers recipe for your next dinner party in 30 minutes or less.

Servings: 6-8 peppers

Ingredients

1 5-oz can of Bumble Bee® Prime Fillet® Albacore Tuna With Chipotle and Olive Oil, drained
2 oz of cream cheese, reduced fat
4 small bell peppers, or sweet peppers
2 tablespoons of chopped green onions
3/4 cup of finely shredded cheese, cheddar is recommended
1/4 teaspoon of cumin
1 teaspoon of salt and pepper, to taste
1/2 teaspoon of chili powder


Directions

Heat oven to 350 degrees Fahrenheit and spray cookie sheet with non-stick spray. Wash and slice bell peppers into fourths. Remove the seeds and place on cookie sheet in a single layer

Mix the tuna, chili powder, cumin, green onions, and cream cheese together in a medium size bowl. Add half of the shredded cheese into the mix. Combine thoroughly. Place a dollop of the tuna mixture on top of each slice of bell pepper. Divide the shredded cheese evenly and place on top of the tuna mixture.

Bake for 15 minutes in the oven or until the cheese as fully melted. Let cool for 2 minutes and serve. Enjoy!
