CHIPOTLE CHUNK LIGHT TUNA WONTON TACOS

Servings: 3-4 Servings

Ingredients

2 cans or pouches (5 oz) Tuna, drained and flaked

2 tablespoons mayonnaise

1 -2 tablespoons chipotle peppers, finely chopped (depending of how spicy you want them)

20 wonton wrappers

1 cup cole slaw mix

Bunch of cilantro

1 avocado

3 tablespoons sesame seeds


Directions

Preheat oven to 350 degrees F and spray baking pan with cooking spray. Drape wonton wrappers along outside of pan. Bake in oven 10 minutes until brown and crisp. Mix tuna mixture in bowl by adding two cans of drained tuna, mayonnaise and chipotle peppers; Mix well. Chop cilantro and cut avocado into small chunks. Fill each baked wonton with a small amount of cole slaw mix, top with tuna, cilantro and avocado and finish with sesame seeds. Serve and enjoy

For extra heat, add additional hot sauce to each taco.
