Mini Salmon Quiches

This quick and easy recipe makes flavorful mini quiches that are creamy and healthy. They are individually sized and without a crust for great portion and easy sharing at your next brunch or cocktail party. These tasty mini quiches will be a favorite for the entire family.

Prep Time: 20 minutes
Servings: 20-22 mini quiches


1 can (5 oz) Prime Fillet® Skinless and Boneless Atlantic Salmon, drained and flaked

4 whole eggs

1/4 cup of whole milk

1/3 cup of cream cheese (regular or whipped)

1 tablespoon of chopped chives

Salt and pepper to taste

Nonstick cooking spray

Extra cream cheese to garnish

Fresh dill to garnish

Capers to garnish (optional)


Preheat oven to 375 degrees F. In a bowl, whisk eggs thoroughly. Add the milk, cheese, chives, salmon, salt and pepper and mix well. Using a measuring cup with a pouring edge or spout, transfer the mixture to a nonstick mini muffin pan or pan sprayed with nonstick cooking spray. Pour evenly, filling the wells almost to the top. Cook for 10 minutes. Turn the oven to high broil and cook an additional 2 minutes, or until golden brown. Remove pan from the oven and run a small knife or utensil around each the outside of each quiche to loosen them from the pan, making them easier to remove without breaking. Remove each mini quiche. Garnish with cream cheese and dill. Serve warm or at room temperature. If you would like, garnish with capers and serve with a side of bread.
