5 Delicious Summer Salads with Albacore Tuna


With an abundance of fresh produce available from late spring moving into summer you can create some seriously delicious salads. From tomatoes and sweet corn to strawberries and arugula, these summer inspired salads will delight your taste buds.

Each salad also features albacore tuna as the lean protein addition. We recommend that salads intended for a meal on their own contain a source of lean protein to help keep you satisfied. Albacore tuna complements the flavors of summer perfectly and doesn’t require any prep. It also contains omega 3 fatty acids, selenium, and vitamin D, three nutrients that many people don’t get enough of. We call that a win win salad situation!


Barley, Corn, Tomato Salad with Albacore Tuna

Chewy barley, sweet corn and fresh tomatoes are tossed with cheddar cheese and a tomato vinaigrette. This salad is perfect for a summer lunch or dinner al fresco. 


Makes 2 servings


Tomato Vinaigrette Dressing

1/2 cup halved grape tomatoes

1 1/2 tablespoons olive oil

1/2 tablespoon white or red wine vinegar

1/2 tablespoon lemon juice

1/2 clove garlic, minced

1/8 teaspoon salt

1/8 teaspoon black pepper


10 ounces Bumble Bee albacore tuna (2, 5-ounce cans or pouches)

1/2 cup uncooked semi-pearled barley, cooked according to package directions

3/4 cup fresh corn kernels (or frozen and thawed corn)

1 cup halved grape tomatoes

1/4 cup sliced scallions

1/2 avocado, diced

2 tablespoons diced cheddar cheese

1/4 teaspoon salt

1/4 teaspoon black pepper


In a blender or food processor, blend the dressing ingredients together until uniform. Add water, 1 tablespoon at a time to thin out the mixture as needed.


In another bowl, add tuna, cooked barley, corn, tomatoes, scallions, avocado, cheddar, salt, and black pepper and toss lightly to combine. Toss with dressing to coat as desired.


Panzanella Salad with Albacore Tuna and White Beans

Panzanella is a traditional Italian salad that uses ripe summer tomatoes and dried bread cubes, which soak up the delicious sweet tomato juice and dressing. We’ve added white beans and albacore tuna for a protein boost to make this a full meal.

Makes 1 serving

1/2 cup crusty (preferably almost stale) whole grain bread cut into 1/2-inch cubes

2 teaspoons olive oil, divided

3/4 cup halved grape tomatoes

1/2 cup chopped cucumber

1 tablespoon chopped red onion

1/2 cup canned white beans, rinsed and drained

2 ounces canned tuna in olive oil, lightly drained

1/4 cup basil leaves, roughly torn

2 teaspoons red wine vinegar

1/8 teaspoon garlic powder

1/8 teaspoon salt

1/8 teaspoon black pepper


Heat 1 teaspoon olive oil in a medium skillet over medium high heat. Add bread cubes and heat until lightly toasted, about 5 minutes, turning to brown all sides. Set aside.


In a salad bowl, combine tomatoes, cucumbers, red onion, white beans, tuna, and basil leaves. Whisk together red wine vinegar, remaining 1 teaspoon olive oil, and garlic powder, salt, and black pepper together. Drizzle over salad. Add toasted bread and toss to coat.
