Whole Wheat Linguini with Spicy Sundried Tomatoes, Tuna, and Arugula



This spicy and rich dish is lightened up Italian at its best. Sundried tomatoes, lightly sauteed arugula, and a kick of red pepper meld with linguine and chunks of tuna to create a satisfying meal that will make you feel like you’re dining out.

Ingredients

1 can (5 oz) Bumble Bee® Prime Fillet® Albacore Tuna with Sundried Tomatoes & Olive Oil
4 ounces dry whole wheat linguini
2 teaspoons olive oil
1/2 shallot, thinly sliced
2 cups arugula
1/4 teaspoon crushed red chili pepper flakes
1 green onion, sliced


Directions

Cook pasta according to package instructions. saute the shallot in olive oil over medium-high heat until golden, about 3 minutes. Add arugula and red pepper flakes and saute just until wilted, about 1 minute. Stir in the cooked pasta and the tuna, including all the sauce from the can, and cook over low heat until heated through. Sprinkle with sliced onion before serving.
