Tuna Quesadillas

Servings: Serves 4

Ingredients

2 cans or pouches (5 oz) Solid White Albacore in Water, drained and flaked

1 can (15 oz) kidney beans, rinsed & drained

1/2 cup salsa

6 (10 inch) flour tortillas

1/2 cup chopped tomatoes

1/2 cup diced green onions

1/2 cup sliced black olives

2 tablespoons chopped fresh cilantro

1 jalapeno pepper, seeded and chopped

1 cup shredded Cheddar cheese

1 cup shredded Monterey Jack cheese


Directions

Mash beans with salsa and spread evenly over each tortilla. Sprinkle with tomatoes, onions, olives, cilantro, jalapeno and cheeses. Fold each tortilla in half and press together to flatten. Arrange tortillas in single layer on baking sheet; broil for 6 -8 minutes until crisp; turning halfway through cooking time. Cut quesadillas in half. Serve with sour cream, salsa and guacamole as desired. Makes 12 halves.

Alternate Cooking Directions: Light butter outside of tortilla. Cook in skillet 2 minutes per side or until golden brown and cheese is melted. Cut in half, serve as meal or appetizers. Serving suggestion with sour cream, salsa and guacamole. Makes 12 halves. Serves 4 (3 pieces).
