Swap out sliced bread in your sandwiches and opt for easy Tuna and Dill Greek Pita Pockets that highlights a tangy citrus Greek yogurt sauce and Bumble Bee® Solid White Albacore Tuna. With cucumbers in season for summer, complement the creamy flavors of this pita recipe with the satisfying crunch of cucumbers and burst of cherry tomatoes.

Servings: 5 pita sandwiches

Ingredients

2 5 oz cans of Bumble Bee® Solid White Albacore In Water, drained
5 whole pitas for bread
½ cup of cucumber, sliced thin
½ cup of cherry tomatoes, halved
½ cup of feta cheese
½ cup of Greek yogurt, plain
2 teaspoons of fresh dill
1 teaspoon of dried oregano
1 teaspoon of parsley
1 tablespoon of fresh lemon juice
1 teaspoon of salt & pepper to taste


Directions

Mix lemon juice, Greek yogurt, dill, oregano, salt and pepper together in a bowl. Add sauce to the drained tuna a bit at a time until you reach the consistency and sauciness you desire. Combine cucumbers, tomatoes and feta into the tuna mixture. Cut the pitas in half and create a pocket. Fill the inside of each pita half with the mixture and sprinkle with parsley. Enjoy!
