Tuna And Dill Greek Pita Pockets

With cucumbers in season for summer, complement the creamy flavors of this pita recipe with the satisfying crunch of cucumbers and burst of cherry tomatoes.

Servings: 5 pita sandwiches


2 5 oz cans of Solid White Albacore In Water, drained

5 whole pitas for bread

½ cup of cucumber, sliced thin

½ cup of cherry tomatoes, halved

½ cup of feta cheese

½ cup of Greek yogurt, plain

2 teaspoons of fresh dill

1 teaspoon of dried oregano

1 teaspoon of parsley

1 tablespoon of fresh lemon juice

1 teaspoon of salt & pepper to taste


Mix lemon juice, Greek yogurt, dill, oregano, salt and pepper together in a bowl. Add sauce to the drained tuna a bit at a time until you reach the consistency and sauciness you desire. Combine cucumbers, tomatoes and feta into the tuna mixture. Cut the pitas in half and create a pocket. Fill the inside of each pita half with the mixture and sprinkle with parsley. Enjoy!
