Tuna Cakes with Lemon Salsa



This simple, yet flavorful tuna cake recipe from Sam the Cooking Guy is a definite crowd-pleaser. Featuring Bumble Bee® Solid White Albacore Tuna, these Grilled Tuna Cakes with Lemon Salsa can be made for lunch, or even as a creative appetizer for your next party. These crispy tuna cakes combined with the zing of fresh lemon salsa bring a light yet satisfying bite to any palate.

Servings: 10 2-inch cakes

Ingredients

2 5-oz cans Bumble Bee® Solid White Albacore, drained
1/2 lemon, juiced
1/2 cup panko bread crumbs
1/4 cup green onion, finely chopped
1/4 cup parsley, finely chopped
2 cloves garlic, minced fine
1 teaspoon kosher salt & fresh ground pepper
1 tablespoon of neutral oil for cooking
LEMON SALSA:
3 lemons peeled, seeded and diced small
1/4 cup red onion, diced
1/4 cup cucumber, peeled and diced small
1 red jalapeno, seeded and diced small
Kosher salt & fresh ground pepper
Non-fat plain yogurt for serving


Directions

In a large bowl, combine all ingredients for the cakes. Shape into 10, tightly packed, 2-inch cakes. Refrigerate on wax paper for about 30 minutes. Remove from refrigerator and heat a layer of oil over medium in a non-stick pan. Fry until golden brown and crispy on both sides. While they cook, mix ingredients for salsa – season to taste with salt & pepper. Serve topped with a little yogurt and the salsa.
