Tuna, Apricots, and Wild Rice Salad

Enjoy a wholesome lunch with this Tuna, Apricots, and Wild Rice Salad. Highlighting sophisticated flavors and Solid White Albacore Tuna, this hearty rice salad recipe perfectly melds salty with sweet. As an added bonus, this recipe is gluten-free as well!

Servings: 4 servings


2 5 oz cans of Solid White Albacore In Water
3 cups wild rice, cooked
¾ cup green grapes, cut in half
½ cup dried apricots, chopped
¼ cup roasted sunflower seeds, salted
2 tablespoons fresh parsley, minced

¼ cup extra virgin olive oil
1 tablespoon shallot, minced
2 teaspoons honey
2 teaspoons Dijon mustard, coarse or grainy
2 teaspoons cider vinegar
1 teaspoon salt & pepper to taste


Combine all the dressing ingredients into a small jar and shake to blend. Mix rice, apricots, sunflower seeds, grapes, and parsley in a bowl. Drizzle half of dressing to coat and toss. Fold in tuna so the chunks don’t break. Drizzle with more dressing to taste. Serve and enjoy!
