Spicy Tuna Cucumber Sushi



Sushi just got a whole lot tastier with this unique approach. Rolling up cucumber instead of seaweed and Bumble Bee® Solid White Albacore Tuna, this Spicy Tuna Cucumber Sushi recipe is a crisp and refreshing treat for a hot summer day. If you don’t feel like rolling up this tuna sushi recipe, toss it all together for a quick and tasty tuna sushi bowl.

Ingredients

1 5 oz can of Bumble Bee® Solid White Albacore Tuna In Water, drained
4 radishes, julienned into matchsticks
1 jalapeno, sliced thinly
½ avocado, sliced
1 English cucumber, cut lengthwise thinly
¼ cup sushi rice, cooked and chilled
¼ cup mayonnaise, substitute with cream cheese or greek yogurt
1 tablespoon of sriracha
2 tablespoons of pickled ginger
1 tablespoon soy sauce, to serve with
1 teaspoon of salt & pepper to taste
1 teaspoon sesame seeds, for garnish


Directions

Ensure that the thinly sliced cucumber is thin enough to roll but not break or tear. Get ready for sushi assembly and lay out cucumber slices on a cutting board.

Combine mayonnaise and sriracha in a small bowl before spreading a thin layer onto each cucumber slice. Scoop a small amount of rice and tuna onto each cucumber slice, about an inch from an end. Layer a slice of avocado, a piece of pickled ginger, some slices of jalapeno, and some radish matchsticks on top.

Season with a dash of salt and pepper before rolling each cucumber sushi roll. Tuck the filling in tightly and secure with a toothpick until ready to eat.

Sprinkle sesame seeds as garnish and dip in soy sauce to eat if desired. Enjoy!
