Spicy Tuna Quinoa Stacks



A recipe that tastes just as good as it looks- what a treat! This Spicy Tuna Quinoa Stack recipe features Solid White Albacore Tuna and is a better-for-you version of a classic combination you might find in a sushi restaurant. With a soy sauce and spicy mayo drizzle on top, each bite is packed with flavor that’ll keep you coming back for more.

Servings: 4 stacks

Ingredients

1 5-oz can of Solid White Albacore Tuna, drained
1 1/3 cups of quinoa, cooked
1 cup of diced cucumber
½ cup of mashed avocado
1 tablespoon of reduced-sodium soy sauce, substitute gluten-free if desired
1 tablespoon of mayonnaise, olive oil based recommended
1 tablespoon of sriracha sauce


Directions

Cook the quinoa according to instructions listed on the box. Spread out onto a pan to cool. Combine mayonnaise and sriracha sauce in a small bowl. Using a dry measuring cup, layer ¼ cup of the diced cucumber before the avocado and then ¼ of the tuna. Top with 1/3 cup of the cooked quinoa. Use caution to turn the cup upside down to lay the stack out onto a plate. Drizzle 1 teaspoon of soy sauce and sriracha-mayo combination over the stack. Repeat with the remaining ingredients. Garnish with toasted sesame, flax, and chia seeds on top if desired.
