Southwestern Tuna Noodle Casserole



Move over traditional tuna casserole, this updated recipe boasts all of the creaminess and comfort of a casserole, without the use of condensed cream soups and loads of fat. Kicked up with green chiles and topped off with crunchy tortillas, this recipe brings the Southwest to your kitchen table in a healthy way.

Ingredients

2 cans (5 oz) Tuna, drained and flaked

8 ounces dry whole wheat pasta shells

1 tablespoon olive oil

1/2 cup chopped yellow onion

3/4 cup chopped red bell pepper

1 can (4 oz) chopped green chiles

2 tablespoons all-purpose flour

2 cups 1 percent milk

1/2 cup (4 oz) reduced fat cream cheese or Neufchatel cheese, softened

1 teaspoon Southwest spice blend

1/2 teaspoon salt

1/2 teaspoon freshly ground black pepper

3/4 cup frozen corn, thawed

1/4 cup sliced scallion

1/2 cup reduced fat shredded Mexican blend cheese, divided

3/4 cup lightly crushed tortilla chips

Directions

Preheat broiler on high. Cook pasta shells according to package directions. While pasta is cooking, heat a large skillet over medium heat. Add oil to pan, swirling to coat. Add onion and red pepper, cooking until tender, about 5 minutes. Add green chili, stir to combine. Evenly sprinkle in flour, stirring constantly, 1 minute. Gradually stir in milk, stirring with a whisk until slightly thick, 5 minutes. Stir in cream cheese, Southwest spices, salt, and pepper; cook 2 minutes, stirring constantly. Remove pan from heat. Stir in cooked and drained pasta, corn, 1/4 cup shredded cheese, and tuna. Spoon mixture into a shallow broiler-safe 2-quart baking dish coated with cooking spray; top with remaining 1/4 cup shredded cheese and tortilla chips. Broil 3 minutes or until golden and bubbly. Let stand 5 minutes before serving.
