Southern Oyster Sub

Servings: Serves 4


1 can (8 oz) Fancy Whole Oysters, drained

1 tablespoon vegetable oil

1 small onion, chopped

1 clove garlic, pressed

1 can (14.5 oz) Italian-style diced tomatoes, do not drain

1 teaspoon sugar

1/4 teaspoon crushed red pepper flakes

1 egg, whisked

1 cup soft bread crumbs

Vegetable oil for frying

1 French bread rolls, split and warmed

Tartar sauce or cocktail sauce (optional)


In skillet, heat oil and saute onion and garlic until softened. Add diced tomatoes, sugar and red pepper flakes. Simmer, uncovered 15-20 minutes until sauce is thick. To prepare oysters, dip oysters in egg, roll in bread crumbs. In another skillet, heat oil and fry oysters in oil until golden. Drain on paper towels. Spoon warm tomato sauce on one side of each roll. Top with oysters. Serve with tartar sauce or cocktail sauce, if desired.
