Smoked Oyster and Swiss Tomato Melt

Smoked oysters are so popular for appetizers that you may find yourself limiting them to that role. But as this recipe shows, they’re wonderful in entrees, too. These simple hot sandwiches stack up English muffins, juicy tomato slices, Oysters, and Swiss Cheese.

Servings: Serves 4


1 can (3.75 oz) Fancy Whole Smoked Oysters, drained

4 English muffins, split

2 tablespoons margarine, at room temperature

1 teaspoon mustard

8 tomato slices, each about 1/4 inch thick

1 cup (4 oz) shredded Swiss cheese


Toast English muffins. Meanwhile, blend margarine and mustard. Spread split sides of toasted muffins with butter mixture. Arrange muffins on a baking sheet in a single layer, buttered sides up. Top each muffin half with a tomato slice. Arrange oysters over tomatoes, then sprinkle evenly with cheese. Broil until cheese is melted and lightly browned. Serve hot.
