Sicilian Albacore Spaghetti



Ditch the Marinara sauce with this Sicilian Albacore Spaghetti recipe. Sicilian flavors burst to life with each bite of this dish. Made with Bumble Bee® Solid White Albacore in Water your whole dinner table will rejoice from this yummy pasta.

Ingredients

2 (5 oz.) cans Bumble Bee® Solid White Albacore in Water, drained
8 oz of spaghetti, uncooked
1 ½ cup of cherry tomatoes, halved
1/2 cup of white wine
1/4 cup of basil, chopped
3 cloves of garlic, chopped
2 medium shallots, sliced
2 tbsp of capers, drained
1 tbsp olive oil
1/4 tsp of chili flakes
Salt and pepper to taste

Breadcrumb Topping
2 tbsp breadcrumbs, whole wheat
1 tsp lemon zest
1 tsp olive oil
1 tsp basil, chopped


Directions

Boil a large bowl of water. Add spaghetti pasta and cook until tender. Drain all water except for 1 cup. Place 1 cup of water to the side.

Place a large skillet with olive oil over a medium heat. Add shallots, garlic, and chili flakes to skillet. Cook for 3-4 minutes or until softened. Add tomatoes and season with salt and pepper. Cook until tomatoes start to soften. Add capers and wine as you turn up the stove heat. Cook until wine has been reduced by half. Add tuna.

Add pasta, basil, and ½ cup of pasta water to skillet. Mix all ingredients together, adding more pasta water when needed in order to form a pasta sauce. Season with salt and pepper.

Transfer pasta to plate.

For the breadcrumb topping, mix the breadcrumbs, basil, lemon zest, and oil together in a mixing bowl. Sprinkle topping on pasta.
