Shrimp and Greens Over Grits



A southern classic gets a healthy makeover, but you’d never taste the difference! This hearty meal has flavor coming from every layer, with spicy sausage, shrimp, greens, and herbs and spices creating a colorful layer over smooth and flavorful grits.

Ingredients

1 can (6 oz) Medium Shrimp
1 reduced sodium spicy chicken sausage, cooked and chopped
1/2 cup chopped onion
1/2 cup chopped red bell pepper
1/2 cup chopped tomato
2 cups chopped kale or collard greens
2 teaspoons olive oil
1 clove garlic, minced
1/2 teaspoon paprika
1/2 teaspoon dried thyme
1/4 teaspoon chili powder
3/4 cup quick cooking grits
1 3/4 cups nonfat milk
1 1/4 cups water
1/4 teaspoon pepper
1/4 teaspoon garlic powder


Directions

Prepare grits according to instructions, using 1 3/4 cups milk and 1 1/4 cup water. Stir pepper, and garlic powder into cooked grits, cover, and set aside. Heat olive oil in a large skillet over medium-high heat. Add onion, bell pepper, chicken sausage, and tomato and saute until tender, about 5 minutes. Add the garlic, shrimp, kale, paprika, thyme, and chili powder and saute until kale is wilted, about 3 more minutes. Divide grits into 2 bowls and top each with half the shrimp mixture.
