Salmon Ramekins with Hollandaise

Dinner for two goes together in a snap when you make this recipe. All the ingredients are easily kept on hand in the cup-board and freezer.

1 can (7.5 oz) Salmon, drained and flaked (remove skin & bones as desired)

1 package (10 oz) frozen green beans

1 can (6 oz) hollandaise sauce

1/4 teaspoon grated lemon peel

1/8 teaspoon dry tarragon leaves

2 tablespoons sliced or slivered almonds


Preheat oven at 350 degrees F. Spoon the green beans and salmon into two prepared 1 1/2 cup ramekins. Mix hollandaise, lemon peel and tarragon and spoon over salmon and green beans. Top with almonds and bake for 15 minutes or until heated through.
