Salmon and Spinach Individual Crustless Quiche



Serve these perfectly portioned quiches at your next brunch, or make one just for you! Leaving out the crust makes for a lighter, but still flavorful, quiche. Serve with a side of fruit or a mixed green salad.

Ingredients

1 can (5 oz) Prime Fillet® Skinless and Boneless Atlantic Salmon, drained and flaked
1 teaspoon olive oil
1/4 cup finely chopped onion
1/4 ground black pepper
1 teaspoon chopped fresh rosemary
2 large eggs
2 egg whites
1/4 cup evaporated low-fat milk
1 tablespoon half and half
2 cups chopped baby spinach
1/4 cup grated Gruyere cheese


Directions

Preheat oven to 350 degrees F. In a medium saute pan, heat olive oil over medium high heat and saute onions until translucent, about 3 minutes. During the last minute of cooking the onions, add the salmon to the pan and stir to combine. Whisk eggs, egg whites, evaporated milk, half and half, black pepper, and rosemary together until combined. Stir in salmon and onion mixture, along with spinach and gruyere. Spray two 10-12 ounce ramekins with cooking spray, then fill with the egg mixture. Bake until golden brown and eggs are set, 30-35 minutes. Quiches can be served in the ramekins or removed before serving.
