Nicoise Salad Stuffed Potatoes



This classic salad gets a major makeover when it’s served over a baked potato and drizzled with a shallot-infused dressing. If you’re looking for ways to fit more veggies into your meals in exciting, flavorful way, look no further than this overstuffed potato.

Ingredients

1 can (5oz) BUMBLE BEE® Prime Fillet® Solid Light Tuna - Tonno in Olive Oil, drained, 1 tablespoon oil reserved

2 teaspoons red wine vinegar

1 teaspoon Dijon mustard

1/4 shallot, minced

2 medium russet potatoes

1/3 cup chopped green beans (frozen and thawed or fresh)

1/3 cup cherry or grape tomatoes

1/4 teaspoon salt

1/4 teaspoon black pepper

1 hard-cooked egg, peeled and diced

8 Kalamata olives, chopped


Directions

In a small bowl, stir together vinegar, reserved oil, mustard, and shallot and set aside. Scrub the potatoes well and prick each with a fork several times. Place potatoes in the microwave and cook on high for 5 minutes, or until potatoes are soft. Spray a skillet with cooking spray and saute the green beans over medium-high heat until they start to become tender, about 4 minutes. Add the tomatoes and continue to cook until the tomatoes begin to shrivel, about 5 more minutes. Sprinkle with salt and pepper. Slice each potato in half, lengthwise, and gently mash the flesh using a fork. Break the tuna into small pieces and divide between the two potatoes, placing it onto one quarter of each potato. Spread half the tomato mixture onto the next quarter of each potato. Place half of the chopped egg on the next quarter and finish by placing half of the olives onto the remaining quarter. Drizzle half of the dressing mixture over the top of each potato.
