Jalapeño Tuna Cake Salad



Savory summer flavors are one of our favorite things about this Jalapeño Tuna Cake Salad recipe. Made with Bumble Bee® Prime Fillet® Albacore Tuna with Jalapeños & Olive Oil this recipe brings you fresh ingredients with the spirit of summer. Ready in 30 minutes or less, this salad is the perfect way to celebrate the season.

Servings: 3-4 servings

Ingredients

Tuna Cakes
3 cans (5 oz.) Bumble Bee® Prime Fillet® Albacore Tuna with Jalapeños & Olive Oil
1 egg
½ teaspoon of dry mustard
1 tablespoon of lite mayo
1 tablespoon of basil
1/3 cup of breadcrumbs
Salt and pepper to taste


Orange Zest Vinaigrette
Juice from 1 large orange
Orange zest
1/3 cup of extra virgin olive oil
1/3 cup of balsamic vinegar


Salad
1 cup of cherry tomatoes
1 cup of shredded carrots
1 avocado, sliced
2 cups of arugula


Directions

Preheat your oven to 400°F. Oil baking sheet and set aside.

In a medium bowl beat egg. Add dry mustard, mayo, basil, and salt and pepper. Gently stir in breadcrumbs and tuna.

With an ice cream scoop form tuna balls for patties and place on baking sheet. Bake for 10 minutes at 400°F, then turn oven to broil and cook until outsides browned. Set aside and let cool.

Combine all dressing ingredients and whisk thoroughly. Slice tomatoes.

Plate your salads by starting with arugula, topping with tomatoes, carrots, and avocado. Finish by adding the tuna cakes and serving dressing on the side.
