Harvest Oyster Pasta Salad

Servings: Serves 5-6


1 can (8 oz) Fancy Whole Oysters

6 ounces tri-colored rotini pasta, cooked according to package

1/2 cup Italian dressing

1/2 cup chopped broccoli tops

1 stalk celery, chopped

1 large carrot, chopped

2 radishes, chopped

1/2 green pepper, chopped

1/4 cup diced fresh parsley

6 large lettuce leaves (for garnish)


Prepare pasta according to package directions. In large bowl, gently combine pasta, oysters and Italian dressing. Add broccoli, celery, carrots, radish, green pepper and parsley, toss gently. Cover and chill. Makes about 10 cups. Serve over lettuce leaves.
