Green Chile Chicken Enchiladas



The smell of this dish baking in the oven will surely bring family members (and maybe even neighbors!) wandering into the kitchen. Melted cheese bubbles between layers of green chile smothered chicken and corn tortillas to create a dish that packs in so much indulgent flavor it’s hard to believe it’s actually good for you.

Ingredients

2 cans (6 oz) Premium Chicken Breast In Water, drained
1 tablespoon olive oil
1 yellow onion, chopped
2 garlic cloves, minced
1/4 teaspoon dried cumin
1/8 teaspoon dried cilantro
1/4 teaspoon freshly ground black pepper
1/4 cup whole wheat flour, divided
1 can (14.5 oz) unsalted diced tomatoes, undrained
4 cans (4 oz) New Mexican green chile (or 2 large peppers, seeded and diced), undrained
1 cup reduced sodium chicken stock
1/3 cup shredded Monterey Jack cheese
1/3 cup shredded cheddar cheese
12 corn tortillas


Directions

Preheat oven to 375 degrees F. In a large saucepan over medium heat, saute onion and garlic in olive oil until soft, about 6 minutes. Add cumin, cilantro, pepper, and 2 tablespoons flour and continue to heat until the flour forms a paste. Turn the heat to medium-high and add tomatoes, chiles, chicken, and chicken stock. Bring to a boil, then reduce to a simmer and cook for 25 minutes, stirring often, until the mixture has reduced by 1/4. Stir in remaining 2 tablespoons flour and simmer for another 2 minutes. Remove from heat.

Mix the cheeses together in a bowl. Place cup of the chile sauce into the bottom of a 9×9 baking dish. Place a single layer of 4 tortillas on top of the sauce. Pour on 1 cup of sauce, spreading to evenly coat the tortillas. Sprinkle on 3 tablespoons shredded cheese and add another layer of tortillas. Pour on another 1 cup of sauce, sprinkle on 3 tablespoons cheese, and top with remaining 4 tortillas. Top with remaining sauce and cheese. Bake for 25 minutes, or until the sauce and cheese are bubbling. Let rest 5 minutes before serving.
