Dijon Tuna Salad Lettuce Cups

Servings: 2-4 Servings


2 5 oz cans of Solid White Albacore In Water (drained)

4 canned or jarred artichoke hearts (cut into eighths)

1 head of lettuce (romaine, red leaf, or bibb recommended)

1 green onion, thinly sliced (green parts only)

2 teaspoons dijon mustard

1 ½ limes (save the juice)

½ cup diced roasted red peppers

½ cup coarsely chopped cucumber

¼ cup olive oil

1 teaspoon of salt & pepper to taste


Add olive oil, lime juice, dijon mustard, salt, and pepper in a medium bowl. Whisk together for the vinaigrette. Add cucumbers, red peppers, artichoke hearts, tuna, and green onions. Dress with the vinaigrette. Spoon tuna salad into lettuce leaves.
