Creamy Salmon Soup



You can have this velvety salmon-vegetable soup ready to serve in about half an hour. It’s a great warm-up for a chilly day; you might accompany it with crisp crackers or crusty bread and a platter of sliced tomatoes.

Servings: Serves 4

Ingredients

1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)

1 tablespoon extra virgin olive oil

1 large onion, diced

1 celery stalk, chopped

1 medium green bell pepper, chopped

2 medium thin-skinned potatoes, diced

1 teaspoon dry thyme leaves

1 teaspoon dry marjoram leaves

1 tablespoon tomato paste

1/4 teaspoon paprika

1/8 teaspoon ground white pepper

1/4 teaspoon salt

1 can (14.5 oz.) chicken broth

2 cups half-and-half or whole milk


Directions

Heat oil in large pan. Add onion, celery, bell pepper and potatoes, lightly saute about 5 minutes. Add salmon, thyme, marjoram, tomato paste, paprika, white pepper, salt, chicken broth and half-and-half. Stir mixture and bring to a gentle boil, simmer for about 15 minutes or until potatoes are tender.
