Creamy Crab Potato Salad



Take this classic picnic staple to a whole new level with tender chunks of crab meat and a creamy dill dressing. You’ll never notice the missing mayo, thanks to a rich dressing that manages to be sweet, salty, and tangy, without overpowering the flavors of the potato and crab.

Ingredients

1 can (6 oz) White Crabmeat
5 medium red potatoes, chopped
1/3 cup nonfat plain Greek style yogurt
1 tablespoon apple cider vinegar
2 teaspoons grainy mustard
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 teaspoon sugar
1 teaspoon dried dill
1 celery rib, diced
1/4 cup diced yellow onion


Directions

In a medium saucepan of water, boil potatoes until tender, about 10 minutes. Drain and set aside to cool. Whisk together yogurt, vinegar, mustard, garlic powder, salt, pepper, and dill. Once the potatoes are cool, combine with celery, onion, and crab and gently stir in the yogurt sauce. Serve immediately or make ahead and refrigerate up to 24 hours in advance.
