Bell Pepper and Oyster Boats

A crisp red pepper spear, a little cream cheese, a smoked oyster – an elegant hors d’oeuvre!

Servings: Makes 32 Appetizers. Serves 6


1 can (3.75 oz.) Fancy Whole Smoked Oysters, drained

3 medium-sized red bell peppers, seeded

1 package (8 oz.) cream cheese, at room temperature

2 tablespoons lemon juice

1 teaspoon celery seeds

48 chive pieces, each 4 inches long


Cut each bell pepper lengthwise into 8 equal strips. Drain oysters, set aside. If necessary, cut larger oysters in half so you have 24 pieces. In a bowl, beat cream cheese, lemon juice, and celery seeds until smooth. Spread about 1 teaspoon of the mixture over end of each pepper strip, covering about 1.5 inches of pepper; then place 1 oyster piece and 2 chive pieces on cheese. Cover and refrigerate; can be made 1 day in advance.
