Liven up your boring office lunch with this festive and versatile Asian Tuna Lettuce Cups recipe, showcasing watermelon radish and Solid White Albacore Tuna. Keep things fresh by separating the tuna salad and the lettuce cups until serving. You can also roll it in rice paper and create your own spring rolls. Dip it in a peanut sauce by combining the dressing ingredients with peanut butter.

2 5 oz cans of Solid White Albacore Tuna In Water, drained
1 carrot, shredded into fine strips
1 green onion, chopped
1 watermelon radish, julienned into strips
1 head of butter lettuce, for serving
2 cloves garlic, minced
¼ cup of rice vinegar
2 tablespoons of vegetable oil
2 tablespoons of cilantro, chopped
1 teaspoon of salt & pepper to taste
¼ teaspoon crushed red pepper
¼ teaspoon ground ginger
1 teaspoon of sesame oil
1 teaspoon sesame seeds, for garnish


Combine all ingredients except for butter lettuce and sesame seeds into a bowl. Mix gently. Serve in the butter lettuce as cups and garnish with the sesame seeds. Enjoy!
