THAI TUNA CAKES W/ CUCUMBER-YOGURT DIP

Ingredients

2 t-oz cans of Bumble Bee Sensations Spicy Thai Chili Seasoned Tuna Medley, drained
1/2 cup diced red bell pepper
1 large egg white
1/3 cup Panko (we use whole wheat)
2 tablespoons chopped fresh cilantro
For the Cucumber-Yogurt Dip
1/2 cup shredded cucumber
1/2 cup nonfat Greek yogurt


Directions

Mix together tuna, egg white, red bell pepper, Panko, and cilantro in a medium bowl. Create patties of about 1.5 inches in diameter, 3/4 inches thick. Heat up a nonstick skillet over medium heat. Add tuna cakes to the pan and cook each side 3-4 minutes, until they are gently browned. For the Cucumber-Yogurt Dip Combine the cucumber and yogurt. Serve cucumber-yogurt dip with tuna cakes and enjoy!
