Tuna and Chard Tostadas with Pumpkin Seeds and Yogurt Dressing



Hearty Swiss chard pairs perfectly with tuna, crunchy pumpkin seeds and a tangy yogurt dressing to make these offbeat but delicious tostadas.

Ingredients

1 can (5 oz) Tuna, drained
1 tablespoon extra virgin olive oil
2 cloves garlic
1 small onion, cut into slivers
1 large bunch Swiss chard, chopped (4-5 stalks)
4 (6 inch) corn tortillas
2 tablespoons toasted pumpkin seeds (pepitas)
2 tablespoons capers
Yogurt Dressing Ingredients:
4 tablespoons plain low-fat Greek yogurt
2 tablespoons white vinegar
1/2 cup fresh dill
Juice of 1 lemon
2 tablespoons fresh scallions
1/4 teaspoon salt


Directions

Heat oil in a saute pan on medium high; mince one clove of garlic and add to pan with onion. Cook for 3-5 minutes, until translucent and soft. Add Swiss chard and saute until stems are soft and greens are wilted. Add tuna to warm and remove from heat. Portion mixture onto the 4 tostadas, then sprinkle with pumpkin seeds and capers. Combine dressing ingredients and the second clove of garlic in a blender or small food processor and puréed until smooth. Drizzle dressing over tostadas; serve immediately.
