Avocado-Tuna Sushi Roll with Brown Rice and Chia Seeds

Avocado and tuna make the perfect combination paired with crunchy chia seeds and brown rice in this fun sushi roll. Substitute our 5 oz Skinless & Boneless Pink Salmon for a taste twist!

Prep Time: 1 hour, 10 minutes
Servings: Serves 4.


1 can (5 oz) Tuna, drained
1 cup brown sushi rice, dry
2 cups water
1/4 teaspoon salt
1/4 cup rice vinegar
1 tablespoon white sugar
2 teaspoons sesame oil
4 Nori seaweed sheets (alternatively, use a thin wheat tortilla)
2 tablespoons chia seeds
1/2 ripe avocado, sliced
Soy sauce (for serving)
Wasabi paste, optional (for serving)


Rinse rice. Add to water and salt in a medium pot, and bring to a boil, lidded. Reduce to simmer and cook for 40 minutes, or until water has been absorbed. Whisk together the vinegar, sugar, and sesame oil briskly. Pour over hot rice, and stir to combine. Allow to cool with lid off. Place Nori on a flat, dry surface. Add 1/4 of the cooked rice mixture and spread, using a flat spoon to push rice into a thin, even layer; allow 1/2"ԝ of the Nori uncovered on one side. Sprinkle 1/2 tablespoon of chia seeds onto each, then lay avocado and chunks of tuna in a line from top to bottom of the square of rice. Gently roll, pressing down as you go, until the tuna and avocado are in the center of the circle. Close by tapping a few drops of water onto the exposed Nori strip, and sealing it to the rest of the roll. Slice into 5-6 sections, repeat with remaining Nori sheets, and serve with soy sauce. If you like the heat of wasabi, try it with this too!
