Quinoa Salad with Tuna, Chickpeas and Colombian Sofrito “Hogao”

By Chef Doreen Colondres

Presenting an extremely healthy, satisfactory and easy-to-make salad, “Hogao”‘ is a traditional Colombian “sofrito”‘ with a mix of four basic ingredients: tomatoes, scallions, garlic, and cilantro. You can also serve it as a “chimichurri”‘ on empanadas: just add olive oil and it’s done. This salad is refreshing and perfect for any occasion, especially for an outdoor summer event.

Prep Time: 20 minutes
Servings: Serves 2-4 portions

Ingredients

2 cans (5 oz) Bumble Bee¨ Prime Fillet¨ Tonno in Olive Oil, drained

3 tablespoons olive oil

1 cup quinoa

1 3/4 cups water or chicken stock

1 garlic clove, finely diced

1/4 cup scallions, finely sliced

1 big pear tomato or 2 small, chopped

Juice of 1 lemon

1 tablespoon fresh cilantro, chopped

1 can (15 oz) cooked chickpeas, drained

Salt and pepper to taste

Directions

In a medium pot on medium high temperature, mix a tablespoon of olive oil and quinoa and saute for one minute. Add water or chicken stock and wait until it starts boiling. Next, lower the temperature to medium low, cover and cook for about 12 minutes or until the liquid evaporates. Transfer the quinoa to a big bowl and mix with the garlic, scallions, tomato, lemon juice, cilantro, and chickpeas and stir to combine all the ingredients. Then, add the tuna to keep the fillets in big pieces, add salt and pepper to taste, stir gently and serve. Garnish with more cilantro and drizzle with the rest of the olive oil and enjoy! To improve the flavor, keep in the refrigerator for a few hours before serving.

Note:

If you want to add a spicy element, you can substitute the Tonno in Olive Oil with Bumble Bee¨ Prime Fillet¨ Albacore Tuna with Jalapeno & Olive Oil, or add a chopped Serrano pepper after removing seeds and veins and add to quinoa mixture.
