Chia Hemp Crusted Tuna Cakes over Cabbage Slaw



Crispy tuna cakes are crusted with hemp and chia seeds, making them loaded with healthy omega 3 fats from tuna, chia and hemp seeds, in addition to great flavor. They’re served over a crunchy cabbage salad with a light sesame dressing.

Ingredients

2 can or pouches (5 oz) Bumble Bee® Chunk Light Tuna in Water, drained
3 cups shredded green cabbage (about 1/2 small cabbage head)
1 cup shredded carrots
_ãê_ê cup fresh cilantro, roughly chopped
3 tablespoons apple cider vinegar
Juice of 1 1/2 lemons, divided
2 tablespoons olive oil
1 tablespoon toasted sesame oil
1 tablespoon honey
1 clove garlic
1 1/2 tablespoons chia seeds
1 egg, beaten
1/2 cup dry bread crumbs
3 tablespoons hemp seeds


Directions

Place cabbage, carrots, and cilantro in a large mixing bowl. Combine the cider vinegar, juice from half a lemon, half the olive oil, sesame oil, honey, and garlic in a small food processor and puree until smooth. Pour over the slaw mix and toss to coat, then cover and chill. Meanwhile, combine the chia seeds with the rest of the lemon juice and stir gently. Allow to gel for 5 minutes. Place the tuna, egg, bread crumbs, and the chia gel in a bowl and stir to mix with a fork. Separate into 4 portions and gently shape each into a patty. Put hemp seeds on a plate or shallow bowl, and coat each patty in seeds by putting them into the bowl one at a time and tapping seeds onto each side. Heat remaining olive oil in a shallow non-stick pan on medium, and saute the patties on each side for 5 minutes, until golden brown and crisp. Place slaw in two bowls and serve two patties over each.
