INGREDIENTS:
| 2 cans or pouches (5 oz.) Bumble Bee® Pink Salmon, drained and flaked |
|
1/3 cup mayonnaise |
|
¼ cup finely chopped sun-dried tomatoes |
|
1 tablespoon capers |
|
½ teaspoon ground black pepper |
|
4 each flatbreads or pocketless pitas |
|
1/2 cup lightly packed fresh basil or arugula leaves |
|
4 thin slices provolone or mozzarella cheese |
|
3 tablespoons Italian-style salad dressing or olive oil |
|
|

|
DIRECTIONS:
|
Preheat a grill or Panini pan to medium. Blend salmon with mayonnaise, sun dried tomatoes, capers and pepper. Divide the mixture equally and spread evenly over two of the flatbreads.
Layer the fresh basil and cheese over each salmon-topped flatbread and top with remaining flatbread. Brush dressing evenly over the outside. Grill the sandwiches closing top of Panini pan or if using grill, occasionally pressing lightly with a spatula to mark and to melt cheese. Cut each sandwich into 4 wedges.
