INGREDIENTS:
| 2 - 4 oz pouches Bumble Bee® Prime Fillet® Albacore Steaks, Lemon & Cracked Pepper |
|
8 oz pasta (spaghetti or linguine) |
|
1 jar of pesto sauce (or create your own, recipe below) |
|
½ cup pine nuts |
|
½ pound fresh asparagus, trimmed |
|
water |
|
1 tbsp olive oil |
|
Salt and pepper to taste |
|
|
|
|
DIRECTIONS:
Cook pasta according to package directions, until al dente. Drain and pour into large bowl. Add enough pesto sauce to coat spaghetti. Mix in pine nuts. Set aside.
Pour 2 inches of water into a tall pot and bring to a boil. Place asparagus boiling water, cover and steam for 5-8 minutes, depending on the thickness of the spears until just slightly tender. Drain remaining water. Add olive oil and salt/pepper to coat asparagus.
Open one Bumble Bee pouch and place Albacore Steak on a plate. Heat in microwave for 20-30 seconds on HIGH (Cooking time may vary depending on type of appliance used) Take plate out and assemble spaghetti with pesto and asparagus to plate. Repeat. Dinner is done!
If you want to create your own pesto sauce, you will need:
3 cups fresh basil leaves
1½ cups chopped pine nuts (or walnuts)
4 cloves garlic, peeled
¼ cup grated Parmesan cheese
1 cup olive oil
Salt and pepper to taste
In a food processor, blend together basil leaves, nuts, garlic, and cheese. Pour in oil slowly while still mixing. Stir in salt and pepper.
