Salmon and Pasta Entrée Salad

Spring Potato Salad with Tuna

Servings: Serves 10 (3 each) Course: Appetizers Prep/Cook time: 30 minutes

Diet Consideration: Good source of Omega3, Low sugar

INGREDIENTS:

2 cans or pouches (5 oz) Bumble Bee® Tuna, drained and flaked

2 packages (7 oz.) garlic herb spreadable cheese

1 tablespoon grated lemon peel

2 teaspoon fresh lemon juice

1 teaspoon Italian seasoning blend

1/2 cup chopped toasted pecans

1 sheet frozen puff pastry, thawed

1 large raw egg, beaten with 2 tsp. water

2 tablespoons sesame seeds

18 large fresh basil leaves

6 large roasted red pepper pieces

DIRECTIONS:

Preheat oven to 400°F. Combine tuna, 1 package cheese, lemon peel, juice and Italian seasoning. Stir in pecans. Cut pastry sheet into 3 strips; cut each in half. Place on cookie sheet and brush top with egg mixture. Sprinkle with sesame seeds. Bake in preheated 400°F oven for 13 minutes until golden brown. Cool. Split each pastry in half and spread with remaining package of cheese and 3 basil leaves. Top with 1/3 cup tuna mixture, red peppers and top half of cooked pastry strip, cut into 5 portions. Repeat process preparing all pastry strips. (Makes 30 servings)
