INGREDIENTS:
| 4 cans or pouches (5 oz) Bumble BeeĀ® Tuna, drained and flaked |
|
3 large onions, sliced thin |
|
1/3 cup vegetable oil |
|
1/3 cup pine nuts |
|
6 to 8 pitas, quartered and opened into pockets |
|
DRESSING: |
|
4 tablespoons tahini (sesame seed paste) |
|
6 tablespoons fresh lemon juice |
|
2/3 cup olive oil |
|
1 cup chopped fresh cilantro |
|
2 large garlic clove, minced |
|
1/8 teaspoon cayenne (to taste) |
|
|
|
Garnish with fresh cilantro |

DIRECTIONS:
| Combine tahini, lemon juice, olive oil, cilantro, garlic and cayenne to make dressing. Combine tuna with half dressing mixture. Cook onions in vegetable oil over medium heat until golden brown. Set aside. In a skillet, cook pine nuts over low heat until golden brown. Arrange onions on a platter with tuna mixture, sprinkle with toasted pinenuts. Garnish with cilantro. Serve with pita pockets and extra dressing on side. |
