INGREDIENTS:
| 1 can or pouch (5 oz) Bumble Bee® Tuna, drained and flaked |
|
1 large hard boiled egg, diced |
|
4 ounces roasted red peppers (bottled), minced |
|
1 hot cherry pepper (bottled), drained, seeded and minced |
|
2 tablespoons mayonnaise |
|
1 teaspoon lemon juice |
|
1/8 teaspoon ground cumin |
|
½ small red onion, thinly sliced |
|
4 slices Swiss cheese |
|
2 soft 6 inch Italian rolls |
|
2 teaspoons extra virgin olive oil |
|
|
|
|
DIRECTIONS:
| Combine tuna, egg, peppers, mayonnaise, lemon juice and cumin. Divide the tuna mixture to fill the two rolls. Top with onion and cheese. Close sandwich. Cook sandwiches in olive oil on griddle until golden brown and cheese is melted. |
