INGREDIENTS:
| 2 cans or pouches (5 oz) Bumble Bee® Tuna, drained and flaked |
|
2 pounds medium red potatoes |
|
3 hard boiled eggs, peeled, wedged |
|
1/2 cup chopped onion |
|
2 celery stalks, chopped |
|
2 teaspoons chopped fresh parsley |
|
6 tablespoons extra virgin olive oil |
|
3 tablespoons white wine vinegar |
|
¼ teaspoon ground black pepper |
|
1/8 teaspoon salt |
|
|
|
|
DIRECTIONS:
| Cook potatoes in boiling water until tender, about 30 minutes. Cool. Cut diagonally into wedges. Combine tuna, potatoes, eggs, celery, onions and parsley. Toss mixture with olive oil, vinegar, pepper and salt. Garnish with parsley. Serving suggestion with lettuce. |
